Healthy (M)eggs Benedict

Yes, you read that right. There is such a thing as eggs benny that are actually good for you. In fact, this was actually the recipe that inspired the name for this blog!

My Eggs Benedict have two distinct differences from the classic brunch favourite- sweet potatoes and poached egg whites! Poaching egg whites isn’t as tough as you might think, it’s the same process as poaching an egg and is much more heart-healthy if you’re watching your cholesterol. The sweet potatoes add a bit of extra crunch and a little sweetness to an otherwise savoury dish. It’s a pretty delicious combination.

Start by slicing your peeled sweet potatoes into thin medallions (about 1/4 inch thick.) Sprinkle them with a little salt, pepper and garlic powder then bake them for 30-35 minutes. Add those sweet potato medallions to some toasted whole wheat English muffins, top them with poached egg whites (great for those who are watching their cholesterol) and a drizzle of hollandaise and voila! Healthy Eggs Benny 🙂

I’ve also used a “lighter” Hollandaise sauce with less butter, fewer eggs and the addition of Greek yogurt! I went off of this recipe but made a few of my own additions and modifications.
